Gluten Free Apple Spice Bread

Gluten Free Apple Spice Bread

Brown Rice Flour ¾ Cup(s)
Tapioca Flour ¾ Cup(s)
Millet Flour ¾ Cup(s)
Corn Starch ½ Cup(s)
Apple Pie Spice 2 Tbsp
Xanthan Gum 1 Tbsp
Salt 1 Tsp
Eggs, room temperature, slightly beaten 3  
Granny Smith Apples, grated 1 Cup(s)
Warm Water (85-95°F) ½ Cup(s)
Light Brown Suger, packed 3 Tbsp
Canola Oil 3 Tbsp
Cider Vinegar 1 Tsp
Active Dry Yeast Packet 1  
Pecan Pieces ½ Cup(s)

  Directions

  • Combine brown rice and tapioca flours, milk powder, potato starch, soy flour, sugar, cinnamon, xanthan gum and salt in large bowl. Set aside.
  • Mix together eggs, apples, water, brown sugar, oil and vinegar; pour into bread pan. Spoon flour mixture over top of liquids; sprinkle with yeast.
  • Insert bread pan securely into baking chamber; close lid and plug bread maker into wall outlet. Select: BASIC SETTING, 2LB. LOAF, MEDIUM CRUST. Then press START.
  • Add nuts directly into the bread pan when you hear the "add ingredient" beep. After bread is done baking, remove bread from pan and place on wire rack.
  • Cool completely. Cut into slices to serve.

Makes one, 2-lb. loaf


SUBSTITUTIONS

Substitute black walnut pieces for pecans. Replace Granny Smith apples with any other tart apple variety.
